Not only are these cookies cute, they're also healthy and delicious! I used my favorite protein powder to make the cream filling.โฃ

Cookies (makes 20):โฃ
1 cup peanut butterโฃ
1 cup granular sweetenerโฃ
1 eggโฃ

Stir together until combined. Scoop 1 tbsp balls onto a parchment-lined baking sheet. Use a fork to put a crisscross pattern on the top of each cookie. Sprinkle with flaked sea salt if desired. Bake at 350 degrees for 12 to 15 minutes, or until slightly crispy around the edges. Cool completely on a wire rack.โฃ

Cream filling:โฃ
4 tbsp softened butterโฃ
2 tbsp peanut butterโฃ
1 scoop Protein Milkshake (I used Chocolate Sundae)โฃ
1 tsp cocoa powderโฃ
1 tsp heavy creamโฃ
ยผ tsp vanilla extractโฃ

Cream softened butter with mixer until fluffy. Blend in the peanut butter. Add remaining ingredients and mix until creamy & fluffy.โฃ

Once cookies are completely cooled, flip cookies over and scoop a little filling onto 10 of the cookies, and top with the other 10 cookies. Roll-in sprinkles or finely chopped nuts if desired.โฃ
