This recipe is perfect to make in advance on the weekend & freeze in individual servings Ziploc bags. During the week - just take a bag and pop in the microwave for a protein packed grab and go pancake breakfast!
What you'll need:
1/3 cup ground flax seeds (or you can use oats or almond flour)
1/3 cup non-dairy milk
1/4 teaspoon baking soda (to make them fluffy)
1/3 cup water
1/2 a mashed banana
1 tablespoon vanilla extract
1/4 cup blueberries
How it's made:
1. Preheat the oven to 375 degrees F. Spray a doughnut hole pan liberally with nonstick spray
2. Mix the dry ingredients together.
3. Add the milk, banana, blueberries, and vanilla extract to your blender or even Magic Bullet. Blend.
Optionally, you could just combine them in a bowl and use a hand mixer.
3. Add the dry ingredients to your blended wet ingredients and stir until no more lumps can be found.
Fill the molds of the prepared doughnut hole pan two-thirds of the way with batter. Bake until lightly golden brown, about 10 minutes. Flip and bake another 3 to 4 minutes.
