Low-Carb Raspberry Coconut Protein Cookies

These healthy low-carb raspberry coconut protein cookies were created by @deb.makes.lowcarb.delish. 

 These Raspberry Coconut Protein Cookies are delicious little treats filled with so much goodness! They are low carb, sugar free, keto friendly, and packed with protein. They are perfect for in between meals, for when you are on the go, for a quick breakfast, and delicious enough to serve as a dessert.

They are made with 4-ingredients: unsweetened coconut, Protein Milkshake protein powder, @simplydelishnatural Raspberry Jel Dessert, and egg whites. These are super simple to make. The combination of raspberry and coconut reminds of those zinger snack cakes from when I was kid.

1 1/2 Cup Unsweetened Shredded Coconut
1 serving Protein Milkshake 
1 pkg Raspberry Jel Dessert by @simplydelishnatural
2 Egg Whites
2 to 3 Tablespoons water

1. Preheat oven to 350 degrees
2. In a mixing bowl, whisk together the shredded coconut, coconunt cupcake protein, and raspberry jel dessert.
3. Add the egg whites and mix. Add water, 1 tablespoon at a time until a dough forms. The dough will be a bit dry but it should hold together when scooped.
4. With a small ice cream scoop or spoon, scoop the dough onto a baking sheet lined with parchment paper
5. Bake for 8 minutes or just until set.
