Low-Carb Coconut Funfetti Cake Bars

These healthy low-carb coconut funfetti cake bars were created by @hollys_bestlife. 

Actually celebrating the fact that’s it’s Friday so hard right now... just 12 more days of food service at this hospital...I’m not made out to be free labor at 5am—> It’s not good for my health/ or mood lol)
But I’m learning a lot! So LETS EAT CAKE! 
1/3 cup apple sauce
1/2 cup Greek yogurt (I used @siggisdairy but @lovvelavva also works for vegan!)
1 tsp vanilla extract
1 serving of Protein Milkshake 
3 tbsp coconut flour
1 tsp baking soda
2 tbsp @lakanto monk fruit sweetener
Add the yogurt, apple sauce, and vanilla extract to a mixing bowl and stir well. Add the dry ingredients and mix well!
I added sprinkles and @nestletollhouse Funfetti chips but these are optional (but these Funfetti chips are AMAZING!)
Bake in the oven for 20 minutes at 350 in a 8x8 baking dish.
Let cool and top with some coconut butter and more sprinkles!
(I added spirulina to the @artisanaorganics coconut butter to make it blue!)
Because who doesn’t love colorful food?!?!
