Keto-Friendly Cupcake Protein Truffles

I’m not the kind of person that reaches for a protein shake. It’s just not me. But I do reach for high-protein snacks to keep me full throughout the day so I don’t end up eating 4 bags of popcorn in one sitting. These cupcake protein truffles are made with Protein Milkshake’s Cupcake Batter Protein Powder that has 22g of protein, 110 calories and 3g net carbs per serving. One thing I like about this protein powder is that you can easily add it to things that aren’t protein shakes and it tastes great with no protein flavor. If you like cake, you’ll like this.

Cupcake Protein Truffles 

Ingredients:
• 1 serving Protein Milkshake 
• 1 oz 1/3 less fat cream cheese - softened (3pts)
• 1 tsp truvia baking blend
• 1-1.5 tbsp low-fat milk
• 3/8oz oat flour (1pt)
• Sprinkles

Directions:
Mix ingredients together and chill in the fridge for at least an hour. Once chilled, divide dough into thirds. The mixture will be really sticky - I sprayed a little coconut oil on my hands and then rolled them into balls. Place truffles on parchment paper and freeze until solid. When you’re ready to eat, take them out of the fridge and let them sit for five minutes before eating.
