Keto Coconut Lime Cupcakes

These healthy keto coconut lime cupcakes were created by @kristysketolifestyle. 

Keto Coconut Lime Cupcakes 
I got a package of Coconut Cupcake from Protein Milkshake and decided to make cupcakes with it! Oh my goodness were they delicious!!

1. In a mixer, combine 1 stick of butter, 2/3 cup classic monkfruit sweetener, 2 tsp vanilla, 6 whisked eggs, zest from 1 lime and 2 tbsp unsweetened vanilla almond milk.
2. Add in 1/2 cup coconut flour, 1 tsp baking powder and 2 tbsp Protein Milkshake coconut cupcake powder and mix until incorporated.
3. Fill 12 cupcake liners with batter about 3/4 full.
4. Bake at 350° for 18 minutes.
5. Let cool on a rack before icing.
1. In a mixer, combine 2 tbsp melted butter, 8oz cream cheese, 2 tsp vanilla, zest from 1 lime, juice from 1/2 of a lime, 1 tsp of Protein Milkshake coconut cupcake powder and 1/2 cup of powdered monkfruit sweetener.
2. Beat until smooth and pipe onto cooled cupcakes.
3. Toast some unsweetened coconut flakes in the oven at 375° for a few minutes and sprinkle over top, along with some lime zest.
4. Add a lime wedge to each cupcake for fun!
