Low-Carb Strawberry Lemonade Cake

This healthy low-carb strawberry lemonade cake was created by @_dashofhappiness.

STRAWBERRY LEMONADE CAKE 🍓 this is like a breakfast/coffee/pound cake - whatever you want to call it, it’s a delicious, buttery, soft and bursting with strawberry flavor perfect with tea, coffee or to fulfill a middle of the night craving trip to the fridge..that’s what I definitely did last night..casually standing over my counter eating it straight out of the container.

I made this in a bundt cake pan but you can use a 8x8 pan too!

* 3 cups fine almond flour (i use Kirkland brand from Costco)
* 1 tbs coconut flour
* 1serving Protein Milkshake 
* 1 tsp baking soda
* 1 tsp baking powder
* 1/4 tsp salt
* 2 eggs
* 1 stick butter, melted
* 2/3 cup @swervesweetie granular
* 1/2 tsp vanilla extract
* 1/4 tsp @oooflavors lemonade flavor (brings out the strawberry flavor!)
* 1/3 cup almond milk
* 1 cup chopped strawberries
* confectioner’s @swervesweetie to top

- preheat oven to 350°F.
- in a bowl, mix the flours, baking soda, baking powder, salt, and Protein Milkshake powder.
- in a separate bowl, cream together sugar and butter. Add in eggs, one at a time. Add in vanilla extract. When mixed, add in the flour in two batches (mix half in first then the second half). Add in almond milk and mix well. Fold in strawberries.
- Pour into a greased pan and bake for 30-40 minutes; or until a toothpick comes out clean. Remove and let it completely cool before taking it out of the pan. Dust with confectioner’s swerve & serve!
