Keto Salted Caramel Chocolate Chip and Coconut Macaroon Cookie Cakes

I was desiring to have some more protein, so I tried . It has a great tasting buttery vanilla flavor, really clean ingredients, and awesome macros at 22g protein and only 3g carb per 20g serving. Of course, you can enjoy this simply shaken up with a cold glass of milk of your choice, but I decided to get creative with it. What I came up with resulted in a sweet and dense cake, with a slightly chewy texture and taste reminiscent of coconut macaroon cookies. 
 
So here I present to you:

Mini Salted Caramel Chocolate Chip and Coconut Macaroon Cookie Cakes

Ingredients: 
-3 tbsp Protein Milkshake Cupcake Batter 
-2 large eggs 
-1/2 cup Lakanto monkfruit sweetener
-1/2 cup almond flour
-1/2 cup unsweetened coconut flakes
-1/2 cup @lilys_sweets Salted Caramel Chocolate Chips 
-1/2 tsp baking powder 
-3 tbsp softened cream cheese
-1/2 stick softened butter
-1/2 tsp vanilla extract 

Directions
1.) Preheat oven to 325 F
2.) With hand mixer, combine all wet ingredients before adding everything else but the coconut flakes and chocolate chips. 
3.) Once wet and dry ingredients are mixed, fold in chocolate chips and coconut flakes. 
4.) Fill cake molds until 3/4 full and bake for about 15-20 mins or once toothpick comes out clean.
